Trimming perfect cuts of meat and filleting fish is a culinary art form that requires precision. The fillet knife is highly flexible, featuring an extremely pliable blade with exceptional sharpness that provides full control with every cut. With its ergonomic handle made of red-stained Swedish birch and the Swedish stainless steel knife blade in your hand, you’re ready to take your culinary creations to new heights.
The Fillet Knife Classic 1891 (S) is distinguished by a barrel-shaped handle made of red-stained Swedish birch, inspired by the very first Morakniv knife created over a century ago. The handle’s geometry has been gradually refined over the years to provide maximum control and comfort during long hours in the kitchen.
The stylish, ergonomic handle made of Swedish birch is protected by stainless steel ferrules at both ends, preventing bacteria and moisture from penetrating the wood. With Swedish-made precision-cast stainless steel ferrules, the knives achieve a rustic appearance while providing a comfortable weight and balance in hand. The back ferrule is engraved with the Dalarna coat of arms, serving as a historical guarantee of quality and craftsmanship.
The 18 cm polished knife blade is made from Swedish stainless steel, 12C27, with a recycling rate of over 80%. This high-quality knife steel, combined with our expertise in hardening and metallurgical knowledge, results in an unbeatable, super-flexible knife blade with exceptional blade memory and maximum performance.
The knife blade undergoes a rigorous manufacturing process that has been refined over 130 years at the knife factory in Mora. Our goal is to achieve the ideal balance between optimal sharpness and edge retention. The blade material is heat-treated by first being heated to over a thousand degrees in a protected atmosphere, then cooled to room temperature, and subsequently deep-cooled to below -80°C. Finally, the knife blade is tempered at several hundred degrees to maximize the steel’s performance. After this heat treatment, the knife blade reaches a hardness of 58 HRC.
The knife blade is side-ground under meticulous control, followed by precision sharpening of the edge, resulting in a total edge angle of 36 degrees, with 18 degrees per side.
Each component is carefully developed and crafted with masterful quality, and the knives are hand-assembled by skilled artisans at our knife factory in Mora, Sweden.
