In a unique collaboration between Swedish Michelin-starred chef Mathias Dahlgren, designer Mårten Cyrén and Morakniv, the Steak Knife Masur was born. The beautiful, ergonomic handle, crafted from natural Finnish curly birch, is unique, with each piece showcasing its own distinct grain and luster. This authentic wood material not only offers a visually captivating element but also a comfortable feel in hand, enhancing the dining experience and adding a touch of exclusive, personal style to every meal. The Swedish-made ferrule of precision-cast stainless steel at the juncture of the knife blade and handle prevents bacteria and moisture from seeping into the wood.
The 12 cm polished knife blade is made from Swedish stainless steel, 12C27, with a recycled content of over 80% from the steel producer. This premium-grade steel, combined with expertise in hardening and metallurgy, produces razor-sharp knife blades with a balanced blend of hardness, toughness, and edge retention.
Through a carefully honed heat-treatment process developed over 130 years in the Morakniv factory, each knife blade achieves optimal sharpness and resilience. First, the blade steel is heated to over a thousand degrees in a controlled environment, then gradually cooled to room temperature. Finally, the knife blade is tempered at several hundred degrees to enhance its performance, reaching a hardness of 56.5 HRC.
The knife blade is spine- and side-ground under precise control, followed by an edge sharpening process, where it receives a flat grind with a honing edge. Finally, the knife blade is polished in two stages, with a coarse polish followed by a fine polish.
Every component is thoughtfully developed and crafted with expert skill by our artisans in the Morakniv factory in Mora, Sweden.
