The Fillet Knife Classic 1891 (S) has a coil-shaped handle in red-stained Swedish birch, inspired by the very first Mora knife that was created over a century ago. The handle geometry has been progressively improved over the years to provide maximum control and comfort during long sessions in the kitchen.
The stylish, ergonomic handle made of Swedish birch is protected by stainless steel ferrules at both ends, preventing bacteria and moisture from penetrating the wood. With Swedish-made precision-cast stainless steel ferrules, the knives achieve a rustic appearance while providing a comfortable weight and balance in hand. The back ferrule is engraved with the Dalarna coat of arms, serving as a historical guarantee of quality and craftsmanship.
The 18 cm long polished knife blade is made of Swedish stainless steel, 12C27, with a recycling rate over 80%. A high-quality knife steel that, together with our hardening knowledge and metallurgical know-how, provides an unbeatable super-flexible knife blade with exceptional blade memory and maximum performance.
The knife blade undergoes a rigorous manufacturing process that has been refined over 130 years at the knife factory in Mora. Our goal is to achieve the ideal balance between optimal sharpness and edge retention. The blade material is heat-treated by first being heated to over a thousand degrees in a protected atmosphere, then cooled to room temperature, and subsequently deep-cooled to below -80°C. Finally, the knife blade is tempered at several hundred degrees to maximize the steel’s performance. After this heat treatment, the knife blade reaches a hardness of 58 HRC.
The knife blade is side-ground under meticulous control, followed by precision sharpening of the edge, resulting in a total edge angle of 36 degrees, with 18 degrees per side.
Each component is carefully developed and crafted with masterful quality, and the knives are hand-assembled by skilled artisans at our knife factory in Mora, Sweden.
